Week 19 | Recipe 19: Sloppy Joe Mix


Ya’ll- sometimes you just need a quick recipe that makes everyone happy. I can remember my mom making sloppy-joes when we were kids, one requirement of said sloppy joes— CHEESE! I firmly believe, it’s not a proper sloppy joe, unless there’s cheese involved. Use the shredded mexican blend, a mozzarella for a fancy twist, or just a good ol’ piece of American cheese.
Skip the mustard.
Keep the cheese!

So- in leau of my childhood favorite, I present to you the easy Sloppy Joe Mix. This isn’t my mama’s recipe- but, I have a feeling you’ll still enjoy it.
This is an original weight-watches recipe, which I adjusted to feed more than one person.

Sloppy Joe Mix

Prep time: 5 minutes
Cook time: 15 minutes
Total Time:230 minutes
Serves: 1

Ingredients:

  • 1  c. chunky salsa, medium spicy
  • 2 Tbps “sweet n’ spicy” BBQ sauce {We love the Sweet Baby Ray’s sauce}
  • 3 oz. ground beef, crumbled
  • 2 tsp. onion powder
  • 1 tsp garlic powder

Directions:

  1. Brown ground beef and drain well.
  2. Once drained, pour salsa and barbecue sauce over top.
  3. Mix in onion and garlic powder, continue cooking for approximately 8-10 more minutes for flavors to fully meld.

{TRUTH}
-This is a super simple recipe, and can be served on hamburger buns, hoagy rolls, or plain. My little secret: I like to use it as a dip for potato chips… yep. Don’t tell anyone.
-If you use 80% lean ground beef- this recipe counts for 3 smart points/serving for Weight Watchers..

I tripled this recipe, very easily and was able to spread it out over about 4 meals- great for meal prepping!
What do you think? Would you add anything? A dash of cayenne for more heat? Would you use a special salsa- like garlic or pineapple? MMM- it all sounds good!
