Week 17| Recipe 17: Churro Twists

This past Cinco-de-Mayo I had to work, and in spirit of the day— decided it would be a good idea to brighten the office with a little treat. I’ll include an easy recipe for “skinny” virgin margaritas as well {easily add alcohol and you’ve got a real party}.
These went quickly, and are much easier than making the “real” churros, which will one day be on this blog, since they are literally J’s most FAVORITE thing in the world… when done correctly.

Churro Twists

Prep Time: 15 minutes

Cook Time: 9-11 minutes
Total Time:  30 minutes

Serves 12

  • 2 Tbsp sugar
  • 1 tsp ground cinnamon
  • 1 can {8 oz} Pillsbury refrigerated crescent rolls
  • 2 Tbsp butter, melted

  1. Heat oven to 375°F. In small bowl, mix sugar and cinnamon; set aside.
  2. Unroll dough; separate into 4 rectangles. Presse each to 6×4 in. recatangle. Press perforations to seal, or roll lightly with rolling pin.
  3. Brush tops of 2 rectangles with melted butter, sprinkle each top with about half of the sugar and cinnamon mixture. Top each with remaning rectangle, press edges lightly to seal and brush tops with melted butter.
  4. Using a pizza cutter {or sharp knife} cut each rectangle into approximately 6 strips, lengthwise. Twist the strips, about 3 to 4 times and place on ungreased baking sheet.
  5. Bake 9-11 minutes, or until golden brown and crispy. Brush tops with remaning butter {or more as needed} and sprinkle with rest of sugar and cinnamon mixture.

*These weren’t super crispy, but were still devoured.
*This was pretty “messy”, the crecent dough was sticking to everything, but worth it.
*Skinny version: use low-fat/fat-free cresecent rolls

Easy Virgin Margaritas

Prep time: 5 minutes
Total time: 5 minutes +/- refrigerating time

Serves 4

  • 1/2 to 3/4 liter Diet Lemon-Lime Soda
  • Juice of ~3-4 limes {depending on your preference}
  • Ice CubesDirections
  1. Combine diet soda with limes, and chill.
  2. Serve over ice or blend,

*I used more like 5 limes and really enjoyed the super lime flavor.
*To make this version alcoholic- you can add ~1oz to 2oz per person
*I served mine “on the rocks” with lots of margarita salt, but feel free to blend away on this lovely little concotion.

Here’s to eating and drinking well!
