Week 15 | Recipe 15: Mini Ham, Cheese & Chicken Poppers


These little beauties are simple and super delicious. I have a suspicion even kiddos might love these too! I think these could easily be switched up- even with hot dogs {I’m thinking ‘corn dogs’].

Mini Ham, Cheese & Chicken Poppers

Prep Time: 10 minutes

Cook Time: 20 minutes
Total Time: 30 minutes

Serves 6

Ingredients

  • 8 oz refrigerated bread stick dough
  • Uncooked, boneless, skinless chicken thighs- cut into 24 equal-size pieces
  • String cheese (~4-6 sticks), cut into 6 pieces each
  • Deli Ham Meat, torn into 24 small pieces
  • Butter
  • Garlic powder

Instructions

  1. Preheat oven to 375’F. Line a baking sheet with parchment paper.
  2. Unroll dough and cut into 24 strips. Top each strip with a pieces of chicken, cheese and torn ham. Roll dough around everything, press lightly to seal. [Chicken will stick out]
  3. Place chicken bits on prepared baking sheet, bake until dough is golden brown and chicken is cooked through, ~15-20 minutes. Half way through baking- smear butter on each bit and sprinkle with garlic powder.
  4. Let cool for 5 minutes before serving.
  5. Serves well with ketchup, ranch, or BBQ sauce.

{TRUTH}
*You can go “low-fat” with substituting light string cheese, low fat/low sodium deli meat, and “I can’t believe it’s not butter!” spray. Still just as delicious.

Jeff scarfed these down nearly at the same pace that I did! They were just as delicious warmed up in the oven the next day.

What would you substitute? Would you try the “corn-dog” idea? I’m thinking it might be my next go-round.
