Week 12 | Recipe 12: Cheeseburger Tortilla Pizzas


Well- Jeff skipped out on the deliciously easy dinner last night- he opted for spiral shaped macaroni and cheese- that’s ok. More for leftovers.

This recipe is so versatile- change up the protein, the toppings, and you have so many different variations of a low-fat pizza dinner! Yum!

Cheeseburger Tortilla Pizzas

Prep Time: 15 minutes
Cook Time: 15 minutes
Total Time: 30 minutes

Serves: 4

Ingredients:

  • Cooking spray
  • 34 pound(s) uncooked ground beef
  • 34 cup, chopped uncooked red onion(s), divided
  • 12 cup ketchup
  • 4 medium tortilla(s)
  • 34 cup shredded cheddar cheese
  • 14 cup dill pickles, chopped
  • 1 cup fresh tomato(es), chopped
  • 1 cup, shredded romaine lettuce

Directions:

  1. Preheat oven to 450°F. Coat 2 baking sheets with cooking spray.

  2. Heat a large nonstick skillet over medium-high heat. Add beef and 1/2 cup onion; cook, stirring and breaking up beef with a wooden spoon, until beef is browned, about 6 minutes. Remove from heat; stir in ketchup.

  3. Arrange tortillas on prepared baking sheets. Divide beef mixture over tortillas in an even layer; sprinkle each with 3 tablespoons cheese. Bake until bottoms of tortillas are crisp and cheese is melted, about 5 to 7 minutes.

  4. To serve, sprinkle each pizza with a tablespoon remaining onion, 1 tablespoon pickles, 1/4 cup tomato and 1/4 cup lettuce. Cut each pizza into 4 wedges to serve.

    Yields 1 pizza (4 wedges) per serving.

{TRUTH}
*This recipe turned out great- think of adding BBQ chicken instead of beef and add cheese with onions. Ground turkey with a hint of spices and some delicious specialty sauce. The possibilites are endless!
*You could even add a “big mac” sauce {1/2 cup Mayonnaise 2 tbsp French Salad Dressing 4 tsp Sweet Pickle Relish 1 tbsp minced White Onion 1 tsp White Vinegar 1 tsp Sugar 1/8 tsp Salt Combine & stir in small container. Cover & refrigerate for several hours, or overnight}.
*Definitely bake these- the crunch that’s added to the tortilla is worth it!
*”Healthy” Version: limit the cooking spray you use (just a few sprays), use the leanest meat you can find {93% if possible}, try using whole-wheat tortillas, low-fat shredded cheese— still just as delicious!

 

Again, this turned out pretty yummy! I’m excited to try a few different versions of this as well- especially a BBQ sauce chicken pizza! OH YUM!
I’ll let you know how this goes as far as left-overs… it’s today’s dinner at work!
